If one should use another living being for their own ends, then they at least are morally obliged to find out the details regarding said exploitation. If one is provided food and can not acquire appropriate information regarding process and consequence, then, that is perhaps in line with your statement, however, in America, for instance- while not over publicized- it is no secret that there is perhaps something seriously wrong with the production of milk and eggs. While I do not necessarily agree that even aware vegetarians have an obligation to veganism, Americans (at least) have the opportunity and responsibility to alleviate potential ignorance regarding the use of other living beings, and as such, a defense of local vegetarians based on ignorance is questionable.
